 Sukuma Wiki Recipe (Collard Greens) Kenyan Style:

Ingredients

1 Bunch of Sukuma Wiki (Collard Greens), washed and chopped

3 Tomatoes diced

1 large Onion diced

2- 3 Royco or Maggi cubes

Salt to taste

¼ Pepper (optional)

Vegetable oil to Fry




Directions

Step 1: Heat oil in a cooking pot at low medium heat and fry the onions until soft

Step 2: Next, add in the tomatoes and fry until they form a thick paste. Add in salt, pepper and cubes.

Step 3: Take your chopped Sukuma wiki and add to the cooking tomato sauce.

Step 4: Cover the pot and simmer the Sukuma wiki for 5 minutes.

Step 5: After the 5 minutes, uncover and stir the Sukuma wiki well. Turn off heat.
