Occasionally,I love to eat traditional Kenyan food because they are not only easy to make but very healthy. Tubers are common ingredients in the Kenyan market and there are awesome recipes you can make from arrowroots, cassavas, yams and sweet potatoes. My recipe today is Mshenye which is a traditional Kenyan dish that calls for sweet potatoes. This meal has amazing flavors !!!
Mshenye recipe consist of mashed sweet potatoes mixed with beans and corn (maize). This is one of the main Kenyan swallows that makes a great side dish for your favorite stew. I have noted Mshenye dish is not a recipe you will easily stumble upon in restaurant menus unlike other Kenyan traditional dishes.
The amazing thing about this recipe is the fact that it is traditionally prepared without adding spices or oil; it’s simply boiling the ingredients and mixing them together. This gives you the privilege to enjoy the real taste of beans, corn and sweet potatoes. Well, this doesn’t mean you are restricted to adding any spices of your choice if you want to add an extra kick.
Mshenye dish is really filling which means you stomach will stay full for some hours ; which is a good thing 🙂

Ingredients for Mshenye Recipe
12 Pieces Sweet Potatoes boiled until cooked (Use the yellow ones because they are perfect for this recipe 😉 . Keep hot.
1-cup Boiled kidney beans until soft. Keep Hot.
1-cup Boiled Green maize(corn) until soft. Keep Hot.
Salt to taste
In a cooking pan, put in the hot sweet potatoes.
Next, add in the hot corn
Then the hot kidney beans
Add salt and use a wooden stick or a potato masher and start to mash thoroughly.
