Irio is a traditional Kenyan dish that includes delicious and healthy ingredients. Irio is common recipe but because of the cost of peas many hotels just mash green maize with potatoes and add veggies to imitate mukimo…lol 🙂
What you normally eat in restaurants and hotels is not the original Irio, not unless peas have been added 😉 .Irio is very similar to Southern Africa’s dish Moroko.
Irio recipe is made of potatoes, green peas and fresh green maize or corn. These two are simmered together till ready, then boiled potatoes are added and mashed together. This dish should be served with a stew of your choice such as beef or chicken stew. If desired you can also serve with Nyama Choma (grilled or roasted meat).
For this recipe, I had boiled my potatoes, peas and corn before. This saves cooking time in the kitchen especially if you are craving for Irio and don’t have a lot time to prepare. Now, let’s learn how to cook Kenyan Irio recipe.
How to Cook Kenya Irio Recipe
1 1/2 cup of boiled green peas
1 1/2 cup of boiled fresh corn or maize
7 large potatoes (already boiled)
1/2 cup of water
Little oil to fry
Black Pepper ( ¼ tsp)
Salt to taste
1.In a cooking pot on medium heat, fry the onions and add in the (already boiled) potatoes.Cook for 3 minutes.
Spoon the stew of your choice and pour it on top of your Irio and enjoy 🙂
